Acqua pazza or crazy water is one of our favourite sauces. Usually served with lightly poached fresh fish, this rich and savory sauce is remarkably simple to make, yet also extremely complex. The use of fresh summer veggies help create a strong flavor base (much like a mirepoix) from which we then layer on the richness of ripe cherry tomatoes and inject a shot of umami from the capers and artichoke hearts. Pair that with some shallow pan-fried chicken thighs and you're gonna want to acqua pazza everything for the next week.
