Pan-frying gives the salmon a nice crust and reduces the ginger miso sauce to a glaze-like consistency, coating every bite with a punch of umami.
Oven baking lets the water from the veggies mix with the sauce bringing out the lighter more floral ginger notes. Also....no mess!
