Buttermilk pancakes with burnt apples and gula melaka butter (Serves 2)
REAL BUTTERMILK PANCAKES!!!! If you know how hard it is to find buttermilk in Singapore, you'd appreciate the fact that we not only have buttermilk, but we have pretty darned good fresh buttermilk made locally! The acidity in the buttermilk helps to activate the baking soda while also imparting a slight tang, giving you a truly complex tasting stack of fluffy pancakes (move over, premixed store-bought versions). Top that with our freshly made from scratch burnt apple sauce, and a dollop of gula melaka butter, and you might end up not want to share this serving for 2 with anyone.
