Yau Mak with Mustard Greens
We've recently been infatuated with this seemingly plebian vegetable: Yau Mak Chye. While it looks like the more popular romaine lettuce (some even name it baby romaine), the lack of a bitter note makes it, in our opinion, superior to cook with. Flash stir-fry it over high heat and you'll have yourself a vegetable with the crunch of a raw salad but also the developed sweet notes from a vegetable that has been cooked to perfection.
